Impressive Cranberry Brie Stuffed Chicken

A delightful dish combining juicy chicken breasts, creamy brie cheese, and tart cranberry sauce, perfect for family dinners or special occasions.

  • 4 boneless, skinless chicken breasts
  • 1 cup cranberry sauce
  • 8 ounces brie cheese, rind removed
  • Salt and pepper to taste
  • Olive oil
  • Fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut a pocket into the side of each chicken breast.
  3. Season each chicken breast with salt and pepper.
  4. Spoon about ¼ cup of cranberry sauce into each pocket, followed by slices of brie cheese.
  5. In a large skillet, heat olive oil over medium-high heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish and bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for a few minutes before slicing and serve hot.
