  • 4 ounces semi-sweet chocolate, chopped
  • 6 tablespoons granulated sugar
  • 1/2 cup heavy cream
  • 1/4 cup light corn syrup
  • 3 tablespoons unsweetened cocoa powder
  • 1/8 teaspoon salt
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon pure vanilla extract

Instructions

  1. Combine the chopped semi-sweet chocolate, granulated sugar, heavy cream, light corn syrup, unsweetened cocoa powder, and salt in a medium saucepan over medium heat.
  2. Whisk together until smooth, ensuring the chocolate is melted and well combined.
  3. Allow the mixture to come to a boil while whisking occasionally.
  4. Boil for 3 minutes, continuing to whisk until the fudge is thickened and reaches 220°F (104°C).
  5. Remove from heat and stir in softened butter and pure vanilla extract until fully combined.
  6. Use immediately or store in an airtight container in the refrigerator for up to 1 week.

Notes

For a smoother sauce, finely chop the chocolate and whisk constantly while melting. Store in an airtight container in the refrigerator for up to 1 week.
