Grandma’s Sicilian Ricotta Almond Cookies

  • 1/2 cup unsalted butter, softened

  • 1 teaspoon vanilla extract

  • 1 cup sliced almonds
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the ricotta cheese, egg, and vanilla extract to the butter mixture, mixing well.
  4. Combine the flour, baking powder, and salt in a separate bowl, then gradually mix into the wet ingredients.
  5. Fold in the sliced almonds, distributing them evenly through the dough.
  6. Portion spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 15 to 20 minutes or until the edges are golden brown and the centers are set.
  8. Cool the cookies on a wire rack and dust with powdered sugar before serving if desired.

Notes

Use unsalted butter for better control over salt levels. Store cookies in an airtight container for up to 4 days.
