Gooey Coffee Caramel Cake

  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons brewed coffee
  • 1 tablespoon powdered sugar (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
  2. In a medium bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  3. In a large bowl, beat together softened butter and egg until light and fluffy. Mix in cooled brewed coffee, buttermilk, and vanilla extract.
  4. Gradually stir the dry ingredients into the wet mixture until fully combined.
  5. Pour the batter into the prepared baking pan and bake for 25-30 minutes. Check for doneness with a toothpick.
  6. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack.
  7. For the caramel sauce, combine brown sugar, butter, and heavy cream in a saucepan. Simmer for 3-4 minutes until thickened.
  8. Remove from heat, add vanilla extract, salt, and brewed coffee. Cool slightly and drizzle over the cake.
  9. If desired, dust with powdered sugar before serving.

Notes

For a richer flavor, consider adding espresso powder to the cake batter. Store leftovers in an airtight container for up to 3 days.
