Garlic Butter Chicken Bites Pasta

A warm and comforting garlic butter chicken bites pasta that combines tender chicken with a fragrant garlic butter sauce, perfect for busy weeknights.

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 8 oz pasta (penne, fusilli, or your choice)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese, for garnish
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
  2. Season the chicken bites with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat and cook the seasoned chicken for 6 to 8 minutes until golden and cooked through. Remove and set aside.
  4. In the same skillet, reduce heat to medium and add butter and minced garlic. Sauté for about 1 minute until fragrant.
  5. Return the cooked chicken to the skillet and toss in the garlic butter sauce.
  6. Add the cooked pasta and mix well. If the pasta seems dry, add a splash of reserved pasta water.
  7. Garnish with Parmesan cheese and fresh parsley before serving. Serve immediately.

Notes

Pat the chicken dry before seasoning to promote browning. Store leftovers in an airtight container in the refrigerator for up to 3 days.
