Frosted Red Velvet Cupcake Cookies

Delightful cookies that combine the lusciousness of red velvet cupcakes with the fun of cookies, topped with a creamy swirl of cream cheese frosting.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (softened)
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg, red food coloring, and vanilla extract to the butter-sugar mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are set but the centers are still soft. Let them cool completely on a wire rack.
  8. For the frosting, beat together the softened cream cheese and powdered sugar until smooth and fluffy. Stir in vanilla extract, then frost the cooled cookies generously.

Notes

Consider adding chocolate chips or nuts for extra flavor. Store cookies in an airtight container for up to three days.
