French Onion Chicken Orzo Casserole

A comforting casserole that combines tender chicken, perfectly cooked orzo, caramelized onions, and a rich, cheesy topping.

  • 1.5 lbs Chicken breasts
  • 1 cup Orzo pasta
  • 2 large Onions, thinly sliced
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 1 teaspoon Dried thyme
  • Salt and pepper to taste
  • 1.5 cups Shredded Gruyere or Swiss cheese
  • 2 tablespoons Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, add 2 tablespoons of olive oil and cook the onions for about 15-20 minutes until soft and golden brown.
  3. Stir in the minced garlic and thyme, cooking for an additional minute until fragrant.
  4. In a large bowl, combine the orzo, cooked onions, garlic, chicken, beef broth, and season with salt and pepper. Mix well.
  5. Pour the mixture into a prepared casserole dish and top with shredded cheese.
  6. Bake for 30-35 minutes until the cheese is bubbly and golden. Let it sit for 5-10 minutes before serving.

Notes

Leftovers keep well in the refrigerator for up to three days. This dish can also be prepared ahead of time and baked later.
