Easy Pierogi Sausage Casserole

A heartwarming casserole combining the flavors of seasoned sausage, creamy potatoes, and rich cheese, making it a family favorite.

  • 1 pound of sausage (Italian or kielbasa)
  • 4 cups of frozen or fresh diced potatoes
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • 1 medium onion, diced
  • 1 bell pepper, diced (optional)
  • 1 cup of sour cream
  • 1 teaspoon of garlic powder
  • 1 teaspoon of salt
  • 1 teaspoon of pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the sausage in a large skillet over medium heat until browned and fully cooked, about 5–7 minutes.
  3. Sauté the onions and bell peppers in the same skillet until softened, about 3–4 minutes.
  4. In a large bowl, combine the cooked sausage, sautéed onions and peppers, potatoes, and half of the cheese. Add the garlic powder, salt, and pepper, and mix thoroughly.
  5. Layer the mixture into a greased 9×13 casserole dish, spreading the sour cream evenly over the top and sprinkling the remaining cheese.
  6. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10–15 minutes until the cheese is bubbly and golden.
  7. Let it sit for 5 minutes before serving, then cut into squares, serve hot, and enjoy!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can prepare it a day in advance and bake when ready.
