Easter Shortbread Cookies

Simple, buttery cookies perfect for Easter celebrations, featuring a melt-in-your-mouth texture and easy decoration with colored sugar.

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Colored sugar or sprinkles for decoration (optional)

Instructions

  1. Preheat your oven to 325°F (165°C) and position a rack in the center.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
  3. Add the vanilla extract and mix well.
  4. Sift in the flour and salt gradually, mixing until the dough is smooth.
  5. Roll out the dough to about 1/4 inch thickness on a lightly floured surface.
  6. Use Easter-themed cookie cutters to cut shapes and place them on an ungreased baking sheet.
  7. Sprinkle colored sugar or sprinkles on top if desired.
  8. Bake for 18 to 20 minutes or until the edges are lightly golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store cooled cookies in an airtight container at room temperature for up to 5 days. Dough can be frozen for up to 1 month.
