Crockpot Pierogi Casserole with Kielbasa

A delightful blend of layers of tender potato-filled dumplings, smoky kielbasa, creamy sauce, and cheddar, created in a crockpot for a warm, hearty meal.

Ingredients

  • 1 pack Frozen Pierogi (about 16 oz.)
  • 1 lb. Kielbasa, sliced
  • 1 can Cream of Mushroom Soup (about 10.5 oz.)
  • 1 cup Cheddar Cheese, shredded
  • 1 medium Onion, diced
  • 1 tsp. Garlic Powder
  • Salt and Pepper, to taste

Instructions

  1. Prepare the Ingredients: Dice the onion and slice the kielbasa into bite-sized pieces.
  2. Layer the Ingredients in the Crockpot: Place a layer of frozen pierogi at the bottom, followed by half of the diced onion.
  3. Add the Kielbasa: Evenly spread the sliced kielbasa over the pierogi layer.
  4. Mix the Cream of Mushroom Soup: Blend the soup with garlic powder, salt, and pepper, then pour it over the contents in the crockpot.
  5. Finish with Cheese and Onion: Top with the remaining diced onion and shredded cheese.
  6. Cook on Low: Cover and cook on low for 6-7 hours or high for 3-4 hours until pierogi are tender and cheese is melted.
  7. Serve and Enjoy: Dish up portions and enjoy the casserole.

Notes

This dish can be easily adapted with different proteins or seasonal vegetables. Make sure to avoid overcrowding the crockpot for even cooking.
