Creamy Gingerbread Cheesecake with Caramel Bliss Delight

  • ⅓ cup brown sugar
  • ½ cup melted butter
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup sour cream
  • 1 ½ teaspoons ground ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, brown sugar, and melted butter until mixed well.
  3. Press the mixture into the bottom of a 9-inch springform pan and bake for about 10 minutes.
  4. In a large mixing bowl, beat the softened cream cheese until smooth and gradually add sugar until no lumps remain.
  5. Add the eggs one at a time, mixing well after each addition, then incorporate the sour cream, vanilla, ground ginger, cinnamon, and nutmeg.
  6. Pour the filling over the cooled crust and smooth the top with a spatula.
  7. Bake for 50-60 minutes or until the edges are set, and the center has a slight jiggle.
  8. Let cool in the pan for an hour, then cover and refrigerate for at least 4 hours, preferably overnight.
  9. Before serving, drizzle with caramel sauce and enjoy!
