Cranberry Orange Chicken

A delightful dish balancing sweetness and savory with succulent chicken thighs glazed in a glossy cranberry-orange sauce, perfect for busy weeknights or festive gatherings.

  • 4 chicken thighs (bone-in, skin-on)
  • 1 cup fresh cranberries
  • 1 orange (zested and juiced)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken thighs dry with a paper towel.
  3. In a large mixing bowl, combine cranberries, orange juice, orange zest, honey, soy sauce, garlic powder, salt, and pepper, setting aside some sauce for basting.
  4. Place the chicken thighs in a baking dish or slow cooker and pour the cranberry-orange mixture over them.
  5. Bake in the oven for 30-35 minutes or cook in a slow cooker on low for 4-6 hours.
  6. Baste the chicken with reserved sauce halfway through cooking.
  7. Let the chicken rest for 5 minutes before serving.
