Cowboy Butter Chicken Pasta

A creamy and savory pasta dish featuring tender chicken, garlic butter, and fresh herbs, perfect for quick weeknight dinners.

  • 1 pound Chicken Breast
  • 8 oz Pasta (any short pasta like penne or fusilli)
  • 1/2 cup Butter
  • 4 cloves Garlic, minced
  • 1 cup Chicken Broth
  • 1/2 cup Parmesan Cheese
  • 1 tablespoon Parsley, fresh
  • 1 tablespoon Chives, fresh
  • Salt, to taste
  • Pepper, to taste
  • Cayenne, to taste

Instructions

  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about half a cup of pasta water.
  2. In a skillet over medium heat, melt half of the butter. Add the chicken, seasoning with salt, pepper, and cayenne. Cook for about 6-7 minutes on each side until browned and cooked through. Remove from the skillet and let rest before slicing.
  3. In the same skillet, melt the remaining butter and sauté minced garlic until fragrant, about 1 minute.
  4. Pour in the chicken broth and scrape the bottom of the pan to incorporate any flavorful bits. Bring to a simmer, then add the cooked pasta and toss well to coat.
  5. Slice the cooked chicken and add it back into the pan. Stir in Parmesan cheese until melted, adjusting consistency with reserved pasta water as needed.
  6. Remove from heat and stir in fresh herbs. Adjust seasoning with additional salt or pepper if desired.
  7. Serve immediately, garnished with extra herbs and cheese if desired.

Notes

For a healthier option, consider using whole wheat or gluten-free pasta. Store leftovers in an airtight container for up to four days.
