Cowboy Butter Lemon Bowtie Chicken with Broccoli

A bright, comforting weeknight meal that balances rich butter and garlic with a fresh citrus lift.

  • 2 chicken breasts, boneless and skinless
  • 8 oz bowtie pasta
  • 2 cups broccoli florets
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Cook the bowtie pasta according to package instructions in a large pot of salted boiling water.
  2. Add the broccoli florets during the last 3 minutes of cooking so they become crisp-tender.
  3. Drain the pasta and broccoli together and set aside, reserving a 1/4 cup of pasta cooking water if needed.
  4. Melt the butter in a skillet over medium heat until it foams. Add the minced garlic and sauté for 1 to 2 minutes until fragrant.
  5. Add the chicken breasts to the skillet and season both sides with salt and pepper. Cook until golden brown and cooked through, about 6 to 7 minutes per side.
  6. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  7. Add the lemon zest and lemon juice to the skillet, stirring to combine with the garlic butter.
  8. Toss the cooked pasta and broccoli with the lemon garlic sauce in the skillet.
  9. Serve the pasta topped with sliced chicken and garnish with Parmesan cheese if desired.

Notes

Pat the chicken dry before seasoning for a better sear. Store leftovers in an airtight container for up to 3 days.
