Sweet Cinnamon Roll Cookies

Delightful Cinnamon Roll Cookies that blend the comforting flavors of traditional cinnamon rolls into a fun and easy cookie form.

  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, followed by the vanilla extract until well incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. In a small bowl, mix the brown sugar and additional cinnamon for the filling.
  7. Take about a tablespoon of cookie dough, flatten it slightly, sprinkle a bit of the filling in the center, fold the dough over, and shape into a ball.
  8. Place the cookies spaced apart on the prepared baking sheet and bake for 12-15 minutes until light golden.

Notes

Store leftover cookies in an airtight container at room temperature for up to three days.
