Cinnamon Roll Cookies

These cinnamon roll cookies combine the delightful flavors of classic cinnamon rolls with the convenience of cookies, offering a soft, chewy texture with a warm, spiced filling.

  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon until well blended.
  3. In a separate bowl, cream the softened butter with granulated sugar and packed brown sugar until the mixture is light and fluffy.
  4. Beat in the egg and vanilla extract until the mixture is smooth and well combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. For the filling, combine the packed brown sugar and ground cinnamon in a small bowl.
  7. Spread half of the cookie dough onto a piece of parchment paper, forming a rectangle. Evenly sprinkle the filling over the dough, then roll it tightly.
  8. Slice the rolled dough into rounds about ½ inch thick and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, or until the cookies are golden brown. Allow to cool slightly before serving.

Notes

Ensure your butter is softened to room temperature for easy mixing. Store cookies in an airtight container at room temperature for up to a week.
