Chocolate Turtle Cake

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup chopped pecans
  • 1 cup chocolate chips
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Gradually add this dry mixture to the creamed butter mixture, alternating with buttermilk.
  5. Fold in the chopped pecans and chocolate chips until evenly distributed.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  9. Once cooled, layer the cakes with caramel sauce in between, drizzle with more caramel, and sprinkle with additional pecans before serving.

Notes

Make sure all ingredients are at room temperature for best results. Store leftovers in an airtight container.
