Chocolate Thumbprint Cookies

Indulge in chocolate thumbprint cookies filled with decadent chocolate ganache. These rich and chewy treats are perfect for any occasion.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder (Dutch process)
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla bean paste or extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream
  • Nonpareils for sprinkling on top (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, salt, and baking powder. Set aside.
  3. In a large bowl, beat the softened butter with the brown sugar and granulated sugar until creamy.
  4. Add egg yolks and vanilla to the butter mixture, beating until smooth.
  5. Gradually mix the dry ingredients into the wet ingredients until a cohesive dough forms.
  6. Scoop tablespoon-sized portions of dough and roll into balls, placing them on the baking sheet.
  7. Create an indentation in the center of each dough ball using your thumb.
  8. Bake for 10 to 12 minutes and let cool on a wire rack.
  9. To make the ganache, heat the cream in a saucepan until simmering, then stir in chocolate chips until smooth.
  10. Once cooled, fill each cookie’s indentation with ganache and sprinkle with nonpareils if desired.

Ensure all ingredients are at room temperature for optimal texture. Store cookies in an airtight container for up to one week.
