Chocolate Cherry Cake

A delightful dessert featuring a moist chocolate cake infused with sweet cherry flavor, topped with luscious chocolate icing.

  • 1 (15.25 oz) chocolate cake mix
  • 3 large eggs, room temperature
  • ½ cup (120 g) sour cream, room temperature
  • 1 teaspoon almond extract
  • 1 (21 oz) can cherry pie filling
  • 1 cup mini chocolate chips (optional)
  • 3 oz chocolate chips
  • 3 tablespoons unsalted butter
  • 2 cups (180 – 240 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 34 tablespoons (45 – 60 ml) warm milk

Instructions

  1. Preheat your oven to 350°F (177°C). Lightly grease and line a 9 x 13 inch cake pan with parchment paper.
  2. In a large mixing bowl, combine the eggs, sour cream, almond extract, and chocolate cake mix. Whisk until just combined.
  3. Carefully fold in the cherry pie filling and mini chocolate chips.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 30 to 35 minutes, or until a toothpick comes out with a few moist crumbs.
  5. Allow the cake to cool in the pan for about 1 hour before transferring it to a serving platter.
  6. For the icing, melt the chocolate chips and butter in a microwave-safe bowl. Stir in the powdered sugar, vanilla extract, and warm milk until smooth.
  7. Spread the icing over the cooled cake. Serve with additional cherries on top if desired.

Notes

Make sure your ingredients are at room temperature for the best results. Store leftovers in an airtight container for up to 3 days, or refrigerate for up to 1 week.
