Chicken Bites In Garlic Butter

Tender, golden pieces of chicken bathed in a glossy, garlicky butter sauce, perfect for busy weeknights or casual dinner parties.

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Prepare the chicken: Cut the chicken breasts into 1-inch bite-sized pieces and pat very dry with paper towels.
  2. Season: In a bowl, combine the chicken with salt, black pepper, paprika, and garlic powder. Toss until evenly coated.
  3. Dust with flour: Sprinkle flour over the chicken and toss to coat each piece lightly.
  4. Heat the pan: Warm a skillet over medium-high heat; add olive oil and 1 tablespoon of butter.
  5. Sear the chicken: Add chicken in an even layer and sear for 2-3 minutes without moving.
  6. Flip and finish: Turn the pieces and cook another 3-4 minutes until golden and cooked through.
  7. Remove and rest: Transfer chicken to a plate; leave browned bits in the skillet.
  8. Make the garlic butter sauce: Reduce heat to medium, add remaining butter to the skillet, then minced garlic.
  9. Add flavor: Stir in red pepper flakes and lemon juice, scraping up browned bits.
  10. Combine: Return chicken and juices to skillet, tossing well to coat in the sauce.
  11. Finish and serve: Stir in parsley and sprinkle with Parmesan if using.

Notes

Use a heavy skillet for even browning. If sauce looks too thin, simmer a little longer to concentrate flavors.
