Chewy Sugar Cookies

  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • ½ teaspoon salt
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large mixing bowl, use an electric mixer to beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).
  4. Blend in the eggs, one at a time, followed by the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients and gently mix until just combined.
  6. Use a cookie scoop or spoon to portion the dough onto a prepared baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to a week. Consider freezing for longer storage.
