Chewy Sugar Cookies

Delight in the aroma of freshly baked chewy sugar cookies with a crisp exterior and soft center, perfect for any occasion.

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/3 cups white sugar
  • 1/3 cup white sugar (for rolling)
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt until well combined.
  3. In a large bowl, beat the softened butter and 1 1/4 cups of sugar together until light and fluffy.
  4. Add the egg, egg yolk, vanilla extract, and optional almond extract to the butter mixture, and mix until well combined.
  5. Gradually add the flour mixture to the butter mixture, stirring until a soft dough forms.
  6. Scoop about 1 tablespoon of dough and roll it into a ball, then roll in the reserved sugar before placing on the prepared sheets.
  7. Bake for 8 to 10 minutes, or until the tops are just set and lightly golden.
  8. Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack.

Notes

For a deeper flavor, use browned butter instead of softened butter. Store cookies in an airtight container at room temperature for up to five days.
