Cheesy Garlic Chicken Wraps

  • 1 cup shredded cheese (e.g., mozzarella, cheddar)
  • 2 tbsp minced garlic
  • 1 tsp olive oil
  • Salt and pepper to taste
  • 4 large tortillas
  • 1 cup assorted veggies (e.g., bell peppers, spinach)

Instructions

  1. In a skillet, heat olive oil over medium heat. Once hot, add shredded chicken and season with salt and pepper. Sauté for 5 minutes until heated through.
  2. Stir in minced garlic and cook for an additional 2 minutes until fragrant.
  3. Reduce heat to low, sprinkle shredded cheese over chicken, and cover the skillet. Cook for 2-3 minutes, or until cheese has melted.
  4. While cheese melts, heat tortillas in a microwave for 15-20 seconds or in a dry pan for about 1 minute on each side until warm.
  5. Once cheese has melted, spoon cheesy chicken mixture into the center of each tortilla, top with assorted veggies, and any extras like salsa or sour cream.
  6. Fold the sides of the tortilla over filling and roll it up to create a wrap.
  7. Slice wraps in half and serve warm.
