Cheesy Broccoli Casserole

A comforting casserole that layers tender broccoli with creamy cheese and a crispy topping, perfect for family dinners or potlucks.

Ingredients

  • 4 cups fresh or frozen broccoli, chopped
  • 2 cups cheddar cheese, shredded
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • ½ cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh broccoli, steam or blanch for 3-5 minutes until tender; thaw frozen broccoli in the microwave for 3 minutes.
  3. In a bowl, mix cream of mushroom soup, sour cream, garlic powder, salt, and pepper until smooth.
  4. Combine broccoli with the cheese sauce mixture in a large bowl, stirring in 1.5 cups of cheddar cheese.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Top with remaining 0.5 cup of cheddar cheese and breadcrumbs if desired.
  7. Bake for 25-30 minutes until golden and bubbly.

Notes

Allow leftovers to cool before storing in an airtight container in the refrigerator for up to three days or in the freezer for up to three months.
