  • 2 cups crushed graham crackers
  • 1/2 cup sugar (for the crust)
  • 1/2 cup unsalted butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup sugar (for the filling)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups diced apples
  • 1 cup caramel sauce
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, combine the crushed graham crackers, 1/2 cup of sugar, and melted butter. Mix until thoroughly combined and press firmly into the bottom of the prepared pan.
  3. In a separate bowl, beat together the softened cream cheese, 1 cup of sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Gently fold in the diced apples and ground cinnamon.
  6. Pour the cheesecake mixture over the prepared crust and spread it evenly.
  7. Drizzle caramel sauce on top and swirl it through with a knife.
  8. Bake for 30-35 minutes until the edges are set and the center has a slight jiggle.
  9. Allow to cool completely in the pan and refrigerate for at least 2 hours before slicing into squares.

Notes

For best results, ensure your cream cheese is softened to room temperature before mixing. Store leftovers in an airtight container in the refrigerator for up to 5 days.
