Cajun Chicken Mac and Cheese

A delicious dish that combines creamy macaroni and cheese with bold Cajun spices and shredded rotisserie chicken for a delightful meal.

  • 8 oz elbow macaroni
  • 2 cups rotisserie chicken, shredded
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 tbsp Cajun seasoning
  • 1/2 cup diced bell pepper
  • 1/4 cup diced green onions
  • Salt and pepper to taste

Instructions

  1. In a large pot of boiling salted water, cook the macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add a splash of olive oil or butter. Add the diced bell peppers and sauté for about 3-4 minutes until softened.
  3. Add shredded cheddar cheese and milk into the skillet with the veggies. Stir well until the cheese melts, creating a sauce.
  4. Stir in shredded rotisserie chicken and Cajun seasoning. Mix until heated through.
  5. Add the cooked macaroni to the skillet, mixing well to coat the pasta in the sauce. Cook for an additional 2-3 minutes.
  6. Sprinkle diced green onions over the dish off the heat and serve immediately.

Notes

For a lighter version, substitute cheese with a lower-fat alternative. Adjust the level of Cajun seasoning based on spice preference.
