  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 package (3.4 oz) butterscotch pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add the butterscotch pudding mix, eggs, and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the butterscotch chips.
  7. Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet, spacing them about two inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
