Ingredients

Scale
  • 1 cup unsalted butter
  • 3 cups cake flour
  • 1 cup granulated sugar
  • 1 cup light brown sugar, firmly packed
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ cups buttermilk, room temperature
  • 2 large eggs, room temperature
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups pecan halves, very finely chopped
  • 1 ½ cups unsalted butter, softened (for frosting)
  • 6 oz cream cheese, softened
  • ⅓ cup light brown sugar, firmly packed (for frosting)
  • 1 ½ teaspoons vanilla extract (for frosting)
  • ¼ teaspoon salt (for frosting)
  • 4 ½ cups powdered sugar
  • 1 Tablespoon heavy cream
  • ⅓ cup pecan halves, very finely chopped (optional, for garnish)

Instructions

  1. Brown the Butter: In a saucepan over medium-low heat, melt the unsalted butter until golden brown specks form.
  2. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line three 8-inch round baking pans with parchment paper.
  3. Mix Dry Ingredients: In a large bowl, whisk together the cake flour, granulated sugar, light brown sugar, baking powder, baking soda, and salt.
  4. Combine Ingredients: Pour the browned butter into the dry mixture and mix thoroughly.
  5. Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, and vanilla extract. Gradually add this to the dry ingredients, stirring gently.
  6. Bake the Cake: Divide the batter among the prepared pans and bake for about 30 minutes, or until a toothpick comes out clean. Allow to cool.
  7. Prepare the Frosting: Beat the softened butter, cream cheese, light brown sugar, vanilla extract, and salt until smooth. Gradually mix in the powdered sugar and heavy cream.
  8. Assemble the Cake: Level the cakes if necessary, frost between the layers, and garnish with pecans.
