Brown Sugar Pop Tart Cookies

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and packed brown sugar using an electric mixer for about 2-3 minutes until fluffy.
  3. Beat in the egg and vanilla extract until the mixture is smooth and creamy.
  4. In a separate bowl, whisk together the flour, cinnamon, and salt. Gradually add the dry mixture into the wet ingredients, mixing until just combined.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  6. Once chilled, roll the dough out on a floured surface to about ¼ inch thick and cut out shapes.
  7. Place half of the cutouts on the baking sheet, add a teaspoon of the brown sugar filling in the center, and top with the remaining cutouts. Press down the edges with a fork to seal.
  8. Bake for 12-15 minutes or until the edges are lightly golden.

Notes

These cookies are great for customization with fruit jams or chocolate chips. They can also be stored for up to a week in an airtight container.
