Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch or 9-inch round cake pans with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs and mix in the vegetable oil, buttermilk, and vanilla until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, then stir in the hot water until smooth.
  5. Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick comes out clean. Let cool in the pans before transferring to a wire rack.
  6. For the blackberry filling, cook the blackberries and 1/4 cup sugar in a saucepan until the berries release juices. Stir in the cornstarch slurry and lemon juice until thickened, then cool.
  7. For the whipped cream, beat the heavy whipping cream, powdered sugar, and vanilla until stiff peaks form.
  8. Assemble the cake by layering the blackberry filling and topping with whipped cream. Decorate with fresh blackberries, edible flowers, and chocolate shavings. Dust with cocoa powder. Chill for at least 1 hour before serving.
