  • 2 large eggs
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. In a large bowl, whisk together the sugar, oil, and eggs until well combined. Add the vanilla extract and mix until smooth.
  2. In another bowl, sift together the cocoa powder, baking powder, and salt.
  3. Gradually add the dry mixture to the wet mixture, stirring until the dough comes together.
  4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop tablespoon-sized portions of the dough and roll them into balls. Roll each ball in powdered sugar.
  7. Place the dough balls spaced apart on the prepared baking sheet and bake for about 10-12 minutes.
